Slow cooked Chili with Beef, Beans, Veggies, Tomato juice, Spices and served with Sour cream.
Ingredients
- 1 cup cubed and cooked Beef
- 1 cup Beef stock
- 1/2 cup Garbanzo beans
- 1/2 cup Pinto beans
- 1/2 cup Kidney Beans
- 1/4 cup Black Beans
- 1/2 cup cubed Sweet Potato
- 1/2 cup sliced Onion
- 1/2 cup chopped Celery
- 1/2 cup sliced Green bell pepper(Capsicum)
- 15 oz(425g) diced Tomato with juice
- 1/4 cup chopped Cilantro (Coriander leaves)
- 7.5oz(212g) Tomato paste
- 3/4 tsp Garlic paste
- 1/4 tsp Cumin powder
- 1/2 tsp Oregano
- 2 tbsp Parsley
- 2 tsp Paprika
- 1 tsp Black pepper
- 5 tbsp Soya sauce
- Salt as required
- Bake cubed sweet potato marinated with salt and pepper at 400 degrees F for 25 min.
- Take a shallow pan and saute onion and bell pepper in oil.
- Then add garbanzo beans, pinto beans, kidney beans, black beans, cubed sweet potato. Saute well.
- Mix in beef stock, diced tomato, tomato paste, garlic paste, cumin powder, oregano, parsley, paprika, black pepper, soya sauce and salt. Close an cook for sometime.
- Add cooked beef and cook in a low flame doe 30 min. Keep stirring occasionally.
- When you obtain a thick solution, add celery, cilantro and cook for some more time. Serve hot with sour cream and celery on top!
