Anniversary special ! (Plain cake with marshmallow fondant)


It was our  first wedding anniversary & i wanted to gift my husband something special ! So thought of giving a trial on cake with characters! I wanted it to be small, simple & cute. So finally decided to make a plain cake with a cute bride & groom in marshmallow fondant. Loved working on fondant !  It was not perfect enough as i wanted, but still it was really fun working on fondant & was so happy to make my first fondant cake with characters !!





Chicken Omlette

Ingredients

1/2 cup Chicken pieces
3 Eggs
1/4 cup Onion
1/4 cup Tomato
1 Jalapeno pepper
1 tsp Black pepper
1 tsp Chilly powder
1 tbsp Tomato sauce
3 tbsp milk
Salt as required
Oil

Directions 
  1. Take a bowl & beat egg thoroughly.
  2. Add milk, chilly powder, pepper powder, tomato sauce, salt & mix thoroughly.
  3. Add onion, tomato, jalapeno pepper, chicken pieces to the above.
  4. Divide the solution in 3 equal parts.
  5. Grease a pan with oil & prepare 3 omlettes.
  6. Cook each side for 5 min & its ready.

Chapati Omlette Roll

Ingredients

3 Eggs
1/4 cup Onion
1/4 cup Tomato
1 Jalapeno pepper
1 tsp Black pepper
1 tsp Chilly powder
1 tbsp Tomato sauce
3 tbsp milk
3 Chapatis
Salt as required

Directions 
  1. Take a bowl & beat egg thoroughly.
  2. Add milk, chilly powder, pepper powder, tomato sauce, salt & mix thoroughly.
  3. Add onion, tomato & jalapeno pepper to the above.
  4. Divide the solution in 3 equal parts.
  5. Grease a pan with oil & prepare 3 omlettes.
  6. Cook each side for 5 min.
  7. Take one chapati & place one omlette on top.  Roll it & its ready to eat.   

Marble Cupcake


I love trying out different varieties in cupcakes. This cupcake looks really pretty in appearance with the inside marble colour & the outside decorations. A perfect cupcake for holidays. Enjoy baking the yummy treat and make your friends and family happy !!!

Ingredients

2 and 3/4 cups Flour
2 Eggs
1/2 tsp Salt
4 tsp Vanilla essence
8 tbsp Butter
4 tsp Baking Powder
2 cup Milk 
2 cup Sugar
1/2 cup chocolate chips
Red and Yellow food colour

Directions
  1. Preheat oven to 350 degrees F
  2. Arrange 23 cup cake liners in a cupcake pan.
  3. Take a bowl. Whisk egg, butter & sugar well.
  4. Sieve flour and baking powder and add to the bowl.
  5. Mix well with milk, vanilla essence & salt.
  6. Combine everything thoroughly. Transfer batter equally in 2 bowls and add rose colour in one bowl & yellow colour in the second bowl.
  7. Add chocolate chips in each. Mix again.
  8. Transfer the rose colour batter & yellow colour batter alternatively into the cupcake liners kept in pan & fill each cavity 3/4th full.
  9. Bake in the middle oven rack for 20 min to 25 min.
  10. Insert a tester in the center to check whether the cakes come out clean.
  11. Take out from the oven & let it cool for 10 min.

Chocolate chip cupcake

Chocolate chips are just great for cakes, cookies etc. It adds an extra flavour in each bite. Here is a simple choco chip recipe great for all occasions. I'm planning to make this again for my guests on Christmas eve ! 'm just crazy about making & decorating cupcakes. Hope you wll also love it !

Ingredients for the cupcake 
  • 2 cups Flour 
  • 2 Eggs 
  • 1 1/2 teaspoons Vanilla essence 
  • 4 tablespoons Butter 
  • 2 teaspoons Baking Powder 
  • 1 cup Milk 
  • 1 cup Sugar 
  • 1/2 cup semi sweet mini chocolate chips 
  • 1/2 teaspoon Salt 
Directions
  1. Preheat oven to 350 degrees F
  2. Arrange 12 cup cake liners in a cupcake pan.
  3. Take a bowl. Whisk egg, butter & sugar well.
  4. Add sieved flour & baking powder.
  5. Mix well with milk and add vanilla essence & salt.
  6. Mix everything thoroughly and add the chocolate chips. Stir carefully.
  7. Transfer the batter to the cupcake liners till it is 3/4th full.
  8. Bake in the middle oven rack for 20 min to 25 min.
  9. Insert a tester in the center to check whether the cakes come out clean.
  10. Take out from the oven & let it cool for 10 min.
  11. Unmold the cupcakes and keep aside.
Ingredients for the butter frosting

1 1/2 cup Confectioner's Sugar
4 tbsp Butter
3 tbsp or more Milk
1/2 tsp Vanilla essence
Food colour

Directons
  1. In an electric mixer, blend butter an sugar till fluffy.
  2. Add milk and vanilla essence. Blend again.
  3. Mix in drops of food colour and decorate on the cupcakes with the coloured frosting. 
  4. Sprinkle chocolate chips on top.

Plain Cupcake with Buttercream Frosting



Ingredients for the cake

  • 2 tsp Baking Powder 
  • 1 cup Milk  
  • 1 cup Sugar 
  • Sprinklers
Directions:
  1. Preheat oven to 350 degrees F
  2. Arrange 12 cup cake liners in a cupcake pan.
  3. Take a bowl. Whisk egg, butter & sugar well.
  4. Add sieved flour & baking powder.
  5. Mix well with milk and add vanilla essence & salt.
  6. Mix everything thoroughly & fill each cavity to the top.
  7. Bake in the middle oven rack for 20 min to 25 min.
  8. Insert a tester in the center to check whether the cakes come out clean.
  9. Take out from the oven & let it cool for 10 min.
  10. Unmold the cupcakes & keep aside

Ingredients for the buttercream frosting
  • 1 1/2 cups Confectioner's Sugar  
  • 4 tbsp Butter  
  • 3 tbsp or more Milk  
  • 1/2 tsp Vanilla essence 
  •  Food colour
Directions:
  1. In an electric mixer, blend butter an sugar till fluffy.
  2. Add milk and vanilla essence. Blend again.
  3. Mix in drops of food colour & decorate cupcakes with frosting and sprinklers.

Vegetable Cutlet

Vegetable patties dipped in egg white, coated with breadcrumbs and deep fried.
Total Time.....30 min (Prep - 15 min, Cook-15 min)    
Yield..............8 to 10 cutlets
Level.............Easy


Ingredients
  • 3/4 cup chopped Onion 
  • 1 cup chopped Carrot 
  • 1 cup chopped Beans 
  • 2 large Potatoes
  • 1/4 tsp Chilly powder 
  • 1 tsp  Pepper powder 
  • 3 slices Bread or 1 cup bread crumbs
  • 1 tbsp Ginger Garlic Paste  
  • 1 tsp Garam masala 
  • 1/4 cup chopped Cilantro (Coriander leaves) 
  • 1/2 tsp Mustard seeds  
  • Egg white of 1 egg
  • Salt 
  • Oil
Directions:
  1. Cook potato, mash well & keep aside.
  2. Powder bread slices in a food processor or use ready made bread crumbs.
  3. Take a pan and pour oil. When oil is hot, splutter mustard seeds.
  4. Saute onion with salt. Add ginger garlic paste and saute well.
  5. Add carrot & beans. Cook well
  6. Add garam masala, pepper powder & chilly powder. Saute for few minutes.
  7. Turn off the flame. Add mashed potatoes, cilantro & mix thoroughly.
  8. Make into round or oval shaped patties and keep aside.
  9. Beat egg white thoroughly. Dip the patties in egg white & then coat with bread crumbs.
  10. Fry vegetable cutlet when oil is hot.
  11. Cover in a paper towel so that excess oil will be absorbed. Eat hot & crispy.

Egg Salad

This is a very healthy salad and quite easy to make also. The stuffing  in the eggs gives it a variety and hence its presentable also. 
Total Time..... 30 min (Prep - 15 min, Cook-10 min)    
Yield.............. 2-3 servings
Level..............Easy


Ingredients
  • 3 Eggs 
  • 1 medium sized Potato 
  • 1 medium sized Carrot 
  • 1 medium sized Onion 
  • 1/2 Green Bell pepper (Capsicum) 
  • 1 Tomato 
  • 2 tbsp Mayonnaise 
  • 2 tsp Pepper 
  • Cilantro (coriander leaves) 
  • Salt as required

Directions:
  1. Boil the eggs, cut into halves & take out the egg yolk carefully.
  2. Cook and mash potato & carrot. Keep aside.
  3. Take a bowl  & mix mashed potato-carrot amd  little chopped onion thoroughly.
  4. Add mayonnaise, pepper, cilantro , egg yolk, salt .
  5. Stuff the egg white halves with the above & keep aside.
  6. In a bowl add diced onion, capsicum, tomato in small size. 
  7. Mix mayonnaise, cilantro and 1 tsp pepper  with the above.
  8. Spread on a salad plate & arrange the stuffed eggs on top.

Sausage & Chicken Pizza

Pizza is our all time favourite & we love to try out different  varieties. It is exciting to make pizzas from the scratch and top it with our desired ingredients. Here is a combination of sausage and chicken pizza which is really delicious. 

Ingredients for 12 inch thin crust pizza base
  • 1 cup All purpose Flour (Maida) 
  • 1/4 oz (7g) Pizza yeast 
  • 1 tsp Sugar 
  • 3/4 tsp Salt 
  • 1/2 cup Warm water 
  • 3 tbsp Oil
Ingredients for the Topping
  • 1/2 cup small chicken pieces 
  • 1/2 cup Sausage sliced in round shapes 
  • 1/4 cup diced Green bell pepper    
  • 1/2 Onion 
  • 1/4 cup Tomato 
  • 2 tbsp chopped Spinach 
  • 1 tsp Pepper powder 
  • Salt as required
Others
  • Pizza sauce 
  • Cheese
Directions:
  1. Preheat oven to 400 degrees F.
  2. Combine flour, yeast, sugar & salt in a large bowl. Add oil, water & mix thoroughly.
  3. Add additional flour if the dough is too sticky.
  4. Roll out  the dough in a 12 inch circle & transfer to greased pizza pan.
  5. Top it as desired with pizza sauce, mixed topping ingredients & cheese
  6. Bake for 10 to 12 min on the bottom oven rack.
 

Strawberry Smoothie

Smoothies are great for a healthy breakfast. It is usually made with fresh fruits/chocolate and yogurt/milk/ice-cream. Here is a simple smoothie recipe with strawberries and yogurt. You can also try it out with different other fruits. Its very easy to make & refreshing  too !!
Total Time....10 min (Prep - 5 min, Blend-5 min)
Yield..............2 to 3 glasses
Level.............Easy

Ingredients
  • 5 Strawberries 
  • 3/4 cup Milk 
  • 1 cup Yogurt (Curd) 
  • 1 tbsp Honey 
  • 3 or 4 tbsp Sugar 
  • 4 ice cubes
Directions 
  1. Blend milk, yogurt & sugar thoroughly.
  2. Add strawberries, honey & ice cubes into the above. Blend for some more time.
  3. If  the smoothie is too thick, add little more milk & enjoy the chilled delight.
